One of the things we love to do at holidays is create something unique, something that is not quiet traditional. Something NEW! While we enjoy a good tradition we think its so much fun to play with colors, textures, & flavors to bring something new to the table, literally. This year that something new is these Raspberry Buttercream Frosting Cupcakes.
Raspberry isn’t traditionally thought of as a Christmas flavor. But we say why not? It’s red, beautiful, and delicious. And these cupcakes baked in our Solid Red Bake Bright liners were all of that and more. (We will never get tired of seeing our liners do their thing!) Did we mention these were delicious? For the cupcakes, we baked up some easy peasy vanilla cupcakes and sprinkled them with our Merry & Bright sprinkle mix. They are so much fun to pull out of the oven! Then we topped them with Raspberry Buttercream frosting recipe, and that’s where the magic happens.
You just have to try it, so easy and so yummy.
Easy Raspberry Buttercream Frosting Recipe
- 2 cups butter
- 1 tsp. vanilla
- 1 1/2 Tbsp. raspberry extract
- 8 cups powdered sugar
- 6-8 Tbsp. milk
Beat the butter until it’s nice and soft. Then beat in the extracts. Slowly mix in the powdered sugar and when it’s all incorporated slowly add in the milk. Once you reach your desired consistency give it one last good whip.
Now top those cupcakes and you are all set!
