This recipe is so simple you will be kicking yourself for not making it sooner. A basic white cake mix with some of our favorite Rainbow Jimmies Sprinkles makes you feel like a superstar in the kitchen once again!

As this is a basic white cake base, it is definitely ideal for any themed party. The rainbow sprinkles add just enough color, without being specific to any particular theme.

Can these confetti cupcakes be made in advance?
Yes! One of our favorite things about cakes and cupcakes is how easy it is to make them in advance. You can either refrigerate for a few days, or freeze for longer. Just bake the recipe as directed, and once the cupcakes are fully cooled down, place them in a freezer storage bag.
Make sure you appropriately date and label the bag before putting into the freezer. All you have to do is pull them out of the freezer and allow them to thaw overnight before icing and decorating as normal. They taste just as good, and will save you time on the week of the party.

Can You Add a Different Flavor to this Sprinkles Cupcakes Recipe?
While this is a basic white cake mix that is vanilla flavored, you can definitely kick it up a bit with a different flavor. Try out various extracts for a unique funfetti cupcake flavor base. Lemon extract, almond extract, cherry extract, or even mint extract could be used for different themes and preferences while keeping the basic style the same.

Homemade Funfetti Cupcakes Recipe
Funfetti Cupcakes made from scratch! Homemade cupcakes filled with sprinkles and topped with a Confetti buttercream frosting. Soft, light and fluffy vanilla cupcakes with a colorful mix of jimmies sprinkles!
Ingredients
- 1 ¼ cups flour, all-purpose
- 1 ¼ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 eggs, room temperature
- ¾ cup sugar, white granulated
- 1 ½ teaspoons pure vanilla extract
- ½ cup cooking oil, vegetable or canola
- ½ cup buttermilk
- ⅓ cup Pinata Bash Jimmies Sprinkles
Instructions
- Preheat oven to 350 degrees and fill pan with cupcake liners
- Whisk together flour, baking powder, baking soda and salt. Set aside.
- In a large mixing bowl, beat eggs until lightly frothy
- Gradually add sugar beating about 30 seconds until well combined
- Add oil and vanilla, beat well
- Gradually add dry ingredients, alternating with buttermilk. Starting and stopping with dry ingredients. Dry = 3 additions. Buttermilk = 2 additions.
- Beat until well combined. Batter will be thin.
- Gently fold in sprinkles until evenly combined
- Divide into cupcake liners, ⅔ full
- Bake for 12-15 minutes or until toothpick inserted in the center comes out clean
- Cool completely and frost with Funfetti Buttercream Frosting or your favorite frosting, decorate with Pinata Bash Rainbow Jimmies Sprinkles
